I love couscous. It's such a versatile food and can be either a side dish or a main course. Here it takes center stage.
1 c couscous
1 c vegetable broth
1 peach diced
1 c cherries pitted
1 oz goat cheese
1 c green beans trimmed
Handful sliced almonds
Make couscous using vegetable broth instead of water. Blanch the green beans. To serve : top the couscous with green beans, peaches, cherries goat cheese & almonds
