Brunch bunch

I love brunch. I have a whole Pinterest board dedicated to it (Pinterest.com/Mommydom come check it out!) and am obsessed with it more during the holidays. TheBig Man loves hearty fare. I came up with the best of both worlds-and one that can be easily veganized if you want to try plant based brunch!

4 eggs ( if going vegan use silken tofu)
1/2 c milk
6 slices bread
Parsley
Minced onion
Red pepper flakes
6-8 sausage links, cooked & sliced
1/4 c shredded cheese


Preheat oven to 375. Using a round casserole dish, press bread around. Mix eggs with with seasoning & milk. Beat well. Pour in dish. Add sausage. Sprinkle cheese on top. Bake 20-25 minutes until bubbly. Serve hot.
