I love super easy, super fast breakfast options. Most mornings I don't have time to make an elaborate spread, but want a healthy option.
This fits both criteria
2 tbsp baking mix
Splash vanilla soy milk (or regular milk and a dash of vanilla extract)
Fruit
Silken tofu or cream cheese
Mix baking mix, milk & tofu combining well. Add fruit. Microwave 2 minutes.
