I always love when something works out where you get two for the price of one. I was on Pinterest and saw baked oatmeal. Reading the ingredients, I realized that they were the same as my puppy pancakes! So...double the pleasure, double the yum!
2 c quick cooking oats
1 c unsweetened applesauce
2 tbsp peanut butter
1 c milk (regular or soy)
For oatmeal, add fruit and cinnamon. For pancakes you can add blueberries, apples, carrots &/or peas.
Preheat oven to 350. For pancakes, drop by spoonfuls onto a cookie sheer. For oatmeal, spread the batter into an 8x8 pan. Bake 20 mins, let cool. Store pancakes in an airtight container. For oatmeal, store covered in a refrigerator. To serve, slice and heat for 45 seconds. I top mine with yogurt and berries!
