Dinner tonight is super easy and super yummy.
The little man starts camp today, so its officially summer in our house.
That means, the cusisine gets a lot more simple. One of the most simple meals we have are soup and sammies and this is my southwestern spin on it.
Southwestern corn chowder
2 c milk
1 bag frozen corn, defrosted
2 chipotles in adobo sauce, chopped
handful cilantro
1 tsb flour
1 tsp butter
melt butter and add flour to a soup pot to create a roux. Add milk, corn and chipoltle. heat through and add cilantro.
I am serving it with quesadillas.
They also are super easy to make
You need:
tortillas
cheese
Spray a frying pan with cooking spray. Heat up. Fold tortilla in half, fill with cheese. Cook over medium heat until cheese melts.
Serve hot
