Tuesday is scout night in our house. In between homework, housework and rushing out the door, a healthy, nutritious dinner NEEDS to happen. One of the easiest, tastiest ones that I make is cowboy casserole. If you search on Pinterest, there are dozens of versions, but I like the tex mex spin on mine!
I box radiatore or bow tie pasta, cooked & drained
1 lb ground beef
1 bunch green onions, diced
1 c shredded carrots
1 package taco seasoning
1/2 c water
1 c corn
1/2 c pepper jack cheese
1 c tomato sauce (or 1 can rotel)
Preheat oven to 375.
Sauté ground beef, carrots & scallions. Add taco seasoning & water. Stir until well combined. Pour into casserole dish. Add corn, pasta & sauce. Mix well. Top with cheese. Bake for 25 minutes.
