Sunshiny Day

I was looking for something new to make for breakfast. It seems muffin tin meals 

are all the rage on Pinterest, but nothing really jazzed me.

My mind is still on vacation, mainly because I haven't scrapped it yet.
We had a lot of fun hiking and being outdoors.


But we're home now, and its back to reality.

And breakfast.

Today I made omelet muffins

Super easy and super yummy.

You need:
8 eggs
1 c milk
1/2 c cheese (I used queso fresco, which melts well)
1 tbsp tapioca flour (can use regular flour too)
5 sausage links diced (you can use either vegetarian or meat)
Vegetables chopped (I used spinach)

Preheat oven to 375.
Beat the eggs with the milk. Add in tapioca flour, cheese & veggies. Top with sausage. Pour into greased muffin tins. Bake 25-30 minutes.

Yes! I wrap them individually & freeze. Defrost in fridge or microwave and then zap them for 30 seconds.
