Lucky charms and green milk
I put lucky charms in a bowl and added green food coloring to my son’s milk. Easy peasy lemon squeezy.
I had a very healthy shamrock shake.
1 c almond milk
1 banana
2 c spinach
1 tsp flax seeds
½ tsp peppermint extract
½ c blueberries
2 tbsp carob chips
Blend together. Yum
Vegan Corned beef
I love corned beef, and its one of my favorite parts of St Patrick’s day. The downside is corned beef really isn’t that good for me. I found a great alternative, which has all the flavor and none of the yuckiness.
dry
1 c wheat gluten
¼ c nutritional yeast
1 tbsp onion powder
2 tbsp corned beef spice, ground
½ tsp minced garlic
Salt & pepper
¼ c oatmeal, finely ground
1 tbsp arrowroot powder
¼ Italian bread crumbs
wet
½ c pickled beet juice
3 slices pickled beets
1 tbsp olive oil
1 tbsp ketchup
1 tbsp braggs liquid aminos
½ tbsp liquid smoke
¼ red kidney beans, drained and mashed
Broth
12 c water
1 medium onion sliced into rings
½ c pickled beet juice
2 tbsp corned beef spice
1 tbsp kosher salt
1 tbsp apple cider vinegar
1 tsp paprika
1 tsp liquid smoke
2 bay leaves
Add broth ingredients to a boil, then reduce to a low simmer. Reserve 2 cups
Mix dry ingredients together well.
Add wet ingredients to blender. Puree. mix into dry ingredients. Knead for about 5-10 minutes. Shape into a loaf and place into a disposable loaf pan. Place pan into simmering broth. Cook for 90 minutes. Let cool. Remove from pan, strain broth and let sit in broth overnight.
To serve, slice corned beef and sauté in reserved broth.
Roll a Leprechaun game
I love playing this with the whole family. Its really easy and a lot of fun. You need blank paper, markers and 2 dice.
Every body playing gets paper and markers. As you roll the dice, what your score is what you draw for your leprechaun (see chart)
