Turkey Pot Pie

I'm sure you have your fair share of leftovers, as we do here on the plains. I'm using some to make turkey pot pie, which is one of the Big Man's favorites.


You need:
Leftover turkey ( or chicken)
Frozen veggies
Cream of chicken soup
Milk
Cheese 
Minced onion
Crushed red pepper
Baking mix

In a casserole dish, layer starting with veggies, then add turkey. 
Mix soup with milk, pour over next.
Sprinkle with cheese, onion and pepper.
Mix baking mix with milk pour over top. 

Bake at 375 for 35-40 minutes.

I've substituted leftover mashed potatoes or stuffing for the baking mix, and put leftover green bean casserole as the bottom layer. I've used leftover cheese from the cheese tray, so some years we've had Brie and cheddar, other years Monterrey jack. I've also added leftover gravy to the soup mix, which makes it creamier. 

Whatever you do, it's delicious.
