A favorite meal: sweet chili chicken




Chicken thighs

Chili sauce

Rice
Sesame oil
Peas

Egg

Pre heat oven to 425. Place chicken in baking dish, pour chili sauce over them. Bake for 45 minutes, turning twice.


In the meantime, cook rice. Put in a saute pan, add sesame oil & peas. Towards the end of cooking add an egg& fry with the rice.



I'm also sauteeing frozen stir fry veggies & microwaving egg rolls, with oranges for dessert.

Menu Monday, 5/16 Edition

Its that time again, figuring out what I am going to feed my family for the next week.




Meatless Monday this week is featuring grilled cheese, tomato soup and chips. Brownies a la mode for dessert, and I am salivating.



For taco Tuesday, I am thinking chicken enchiladas, Spanish rice and refried beans and chocolate pudding.



Wednesday is a meeting at church, with pizza!



Thursday is another graduation party, serving dinner.



Friday will be switching things around and we will have Chinese night on Friday. I am thinking chicken stir fry with noodles, egg rolls and fluff.




Saturday, we have not one but TWO graduation parties to attend, so dinner will be leftovers after eating out all day.



Sunday, in honor of my birthday, I really want an old time favorite: fried chicken, mashed potatoes and gravy, wilted greens salad and chocolate cake (and a side of raspberries) for dessert

Menu Monday, Mid May (a bit early)

Its time for me to figure out what the heck to feed my family.

For Mother's Day, I decided that I want French dips.
I love them and they are incredibly easy to make-perfect for mother's day. I am going to make corn on the cob with dilly butter, roasted red potatoes and cupcakes.

On Meatless Monday, we are going to have calzones. Rounding it out will be spinach, salad and leftover cupcakes.

Tuesday will be cafe rio pork on top of cilantro lime rice

. I am going to put the salad on the side, and a healthy serving of peach cobbler and ice cream.

Wednesday is pasta night, and this week's selection will be garlic chicken farfalle. I'm adding salad, garlic bread and leftover desserts.

Thursday we are going to have Mongolian beef, with egg rolls and fried rice. Orange jello for dessert will make a certain Little Man smile,
Friday will be meatball subs, with salad, roasted potatoes and a special dessert.

Saturday is now pizza night! So we are going to get it from some pizza place, and that will make everyone happy.

I'll sleep when I'm dead




Little man came into my room last night, and asked me to come sleep with him. He said he was having nightmares, and I could protect him. Awwww...

First time ever he asked that, by the way.

So, me being the most excellent mommy that I am, I did. I'm very congested right now, so I guess I was snoring a little. Everytime I snored, I got an 8 year old elbow-ING me in the ribs. Needless to say, not very pleasant or sleep conducive. Add to it, 2 people sharing a twin bed, one of those people being me. And a bright light on.

So, after the little man fell asleep I snuck off.to my own bed.

Which had been invaded by animals & a husband. I guess the fact that i moved, I lost my place. I repositioned everyone & got into bed.

Next thing I know, bright light on overhead, and the big man is getting up & dressed. So...toss and turn, toss and turn, toss and turn until my alarm goes off. I hit snooze and I actually sleep. Deeply. Better than I had all night.

Too bad it was for 5 minutes.

Needless to say, I really didn't work out this morning. I kept hitting that snooze button.

When I finally rolled out of bed, I did get dinner started, and put up a load of laundry, so I was somewhat productive.

Tonights culinary pleasure: chicken stir fry.

Cooked chicken

Cooked rice

3 carrots shredded

1 bunch scallions, diced

1 c frozen peas

Teriyaki sauce

2 eggs

Spray a large saute pan or wok with cooking spray. Add carrots & scallions, saute 5-7 minutes. Add chicken. Heat through, add rice. Add teriyaki sauce & peas. Cook an additional 7 minutes. Move food to one side of pan, add egg. Scramble & incorporate into rice.

Serve hot!
