Its another meatless Monday. Tonight we are having calzones. I love them and they are so super easy!
On the side, I think I am going to make Mediterranian spinach
and anitpasto salad with homemade frozen yogurt for dessert.
frozen yogurt
1 c plain yogurt
1 c berries
1 packet stevia in the raw
mix together, put in a freezer safe container. enjoy

Meatless Monday 6/6 edition
Pasta, parmesan garlic biscuits, Med spinach, salad, ice cream
Parmesan garlic biscuits
1 c bisquick
½ c milk
½ c parmesan cheese
2 tsp garlic powder
Mix ingredients together until a dough forms & is sticky.
Drop by spoonful onto baking sheet. Bake at 375 for 15 minutes
Mediterranian Spinach
3 c spinach
1 tsp olive oil
2 cloves garlic, minced
1 tsp red pepper
½ c vegetable broth (or water)
1 small box raisins
handful of pine nuts
Saute garlic in olive oil. Add spinach & broth. Cook till wilted & liquid is absorbed. Add pine nuts, red pepper & raisins and serve
In addition to it being D-Day (thank you, greatest generation) it also is national chocolate ice cream day.
