Taco Tuesday 5/17 Chicken enchiladas

I love chicken enchiladas. They are a fairly easy meal to make, and its super yummy.

preheat oven to 375

tortillas
2 c cooked chicken, diced
1 can enchilada sauce
1 c shredded taco cheese, divided
1 can fiesta cheese soup + 1/2 c milk

mix soup & milk together. add chicken and half of the cheese. put in a tortilla and roll up, placing them seam side down in a casserole dish. continue until all the dish is filled. top with enchilada sauce and remaining cheese. bake at 375 for 30 minutes

I serve my enchiladas with refried beans and my version of Spanish rice.

2 c cooked rice
1/2 c taco sauce
1/2 c scallions diced
mix together and heat up.

and to finish the meal, Mexican chocolate pudding.
1 box chocolate pudding
1/2 c milk
1/2 c cool whip, thawed & divided
1/2 tsp chili powder
shaved chocolate

Mix together pudding, milk half the cool whip and chili powder. spoon into custard cups, refrigerate. to serve top with remaining cool whip and shaved chocolate.
