Bruschetta eggs

1 c spinach cooked
1 egg
Dash garlic powder
Dash red pepper
Handful of fresh basil
1/2 c sliced tomato
1 oz goat cheese

Optional: béchamel sauce

Mix egg, tomato & seasoning together. Put into greased ramekin, top with goat cheese. Microwave on high 1 min. Serve over spinach and top with béchamel and more fresh basil
