Salmon omelet





Breakfast is the most important meal of the day, but I struggle with eating something healthy, quick and easy. Especially something that is going to help keep me full until lunchtime and not send me to the vending machines!
One breakfast that fills the bill is a salmon omelet.

1 salmon fillet defrosted
1 c green beans
1 egg beaten
2 oz goat cheese
2 tbsp milk

Microwave salmon for 2 minutes. Mix other ingredients together, put in sauté pan over low heat. Flake salmon, add. Raise heat. Cook over medium until eggs are set & cheese is melted.
