We had a youth group fundraiser at church last night. Being in the Midwest, the theme was hot dish (casseroles) and jello. We had an awesome turnout and raised a lot of money for the triennial pilgrimage the youth go on. We haven't decided where the kids will go (Boston? Washington? NYC? San Fransisco?)but it still requires a lot of money to make it a reality.
We even were treated to an ugly apron fashion show and the lime jello marshmallow cottage cheese surprise song! The dish that won a 10 year old the coveted golden spoon award? Not your mothers lasagna (very well done!)
My contribution was veganized baked ziti:
1 pkg silken tofu
1 pkg daisoya mozzerella
1 tbsp minced garlic
1 tsp red pepper
1 pkg ziti, cooked & drained
1 can tomato sauce
Preheat oven to 375. Mix tofu, garlic & pepper together. Put pasta in baking dish. Add tofu mixture, stir until pasta is well coated. Top with sauce & mozzerella. Bake for 30 minutes. Serve hot.
