Football Rap

I have a confession to make: I'm a sports nut. I have been since I was a teenager. I liked to play basketball, tennis and softball. I ran track and cheered. I biked and hiked and rock climbed and skiied. I loved, in my 20's going to the ground round with friends and watching Monday night football (later hosting at my house as we moved into a different phase in my life)
Even today, I watch Mike & Mike every morning on ESPN2. I watch Sports Center by default. I'm a rabid Mets and Jets fan. I love the NY Rangers and the Utah Jazz. I follow tennis and Man U. I know my trivia and could hold my own in a sports related discussion with most guys.
I like playing sports and I like watching them.
It was a big football weekend, between the passing of Joe PA and his tarnished legacy and the NFL conference championship games. My team wasn't there, as it was another disappointing season for gang green, but my husband's was (Giants). In fact, when our son was baptized 4 years ago the Giants beat green bay to go to the Superbowl. Yesterday, we discussed baptism during rhythms of grace. Giants won both playoff games in dramatic fashion (see: it pays to go to church & talk about baptism).
Prior to leaving for church yesterday afternoon, I made polenta crostini and homemade taco chips. I put them on the counter in a dish, but didn't close the lid all the way (big mistake). We came home to crumbs.
So I had to make new chips (all out of polenta) to go with the nachos.

Better for you nachos
1 pkg boca crumbles
1/2 pkg taco seasoning
1/4 c teeze cheese
1/2 c daiya cheddar shreds
1/3 c vegetable broth
Optional top with jalepenos, diced scallions, salsa and olives


Sauté boca crumbles, add taco seasoning and broth, cook until broth is absorbed. Add teeze cheese and mix well. Put meat mixture over tortilla chips, top with shredded cheese. Microwave 1-2 minutes until cheese is melted. Add toppings.
