I like changing things up for breakfast. This woman can't live on oatmeal alone! The other morning I tried a tostada for a change. It was super easy and super quick, and it kept me full until lunch time.
You need:
1 egg
2 tbsp milk
Taco seasoning
Scallions diced
Fiesta cheese
Veggies
Tortilla
Avocado
Salsa
Scramble eggs with scallions and taco seasoning. Heat veggies in microwave. Heat a small saucepan, sprayed with Pam. Put tortilla in pot. Add eggs, veggies & cheese. Heat through until bottom is crunchy.
Top with salsa & avocado
