Sweet chili chicken

1 whole chicken, washed inside & out
sweet chili sauce (found in the Asian section)
3 garlic cloves chopped corsly
sea salt & fresh ground pepper to taste
1/2 sweet onion sliced finely
1/2 c water

place garlic under the skin of the chicken and some in the cavity, salt & pepper cavity. Place onions & water in a baking dish, place chicken on top. Top with sauce and place in an oven that's been preheated to 375 degrees. Roast for approx. 2 hours, basting and turning occassionally.
