Times Like These


It's Sunday, the second day of 2011. Sometimes, the best laid plans don't always work out the way we want. No pork roast last night since none was to be had in the store last night. Grrrr. Instead, the big man made sausage sandwiches-mine with peppers & onions. Quite yummy.

However, dinner tonight was supposed to leftovers from the pork roast, so now I have to improvise. I defrosted some pre-cooked chicken thighs that I think will either turn into chicken stir fry or fiesta chicken soup.

Chicken stir fry

Chicken, cut up

Sesame oil

Mongolian fire oil

Scallions

Rice

Stir fry veggies

1 tsp oil for cooking

Heat oil in pan, add chicken & scallions. Cook throughly. While chicken is cooking make rice. Add stir fry veggies to pan, add fire oil (I splash a lot in because I like it spicy) and sesame oil. Serve over rice.

* note: I cook the veggies separately because the big man doesn't like them

The other choice for dinner tonight:

Fiesta chicken soup

1 can fiesta nacho soup

1-2 c cooked chicken, diced

Scallions, diced

1 can kidney beans, rinsed & drained

Other "nacho" fixings you like

1 can milk

Mix milk & soup together well in a saucepan. Heat over low heat. Add chicken & beans increase heat to simmer. Cook about 20 mins. Top with scallions & other nacho fixings.
