L'chaim! L'shana tova!

It is the start of the Jewish high holy days or yamin noraim (roughly translated as days of awe). They start with Rosh Hashanah, which is the New Year and continues for 10 days of repentance (aseret Yememi Teshuvah) ending with Yom Kippur (the day of atonement)
I am not Jewish, but some of my closest friends are, and as result I've learned via osmosis...
I also have learned to cook many ashkenazic dishes that my friends had at their family celebrations.
One such dish is kugel. Most are incredibly fattening (but good). I've lightened mine up, and it makes for a great fall dessert as well.

2-4 apples, peeled cored and diced
1/3 c honey
1 pkg egg noodles, cooked drained and cooled
1 c walnuts
1 pkg silken tofu
1/3 c raisins
1/2 c chopped dates

Preheat oven to 350
Mix silken tofu and honey together. Beat until fluffy. Add noodles and fruit. Place in a baking dish. Top with walnuts; bake for 20-25 minutes.
