S-u-n-d-a-y night

Ok, so it doesn't have the same ring as Saturday Night by the Bay City Rollers, but in a pinch it will do. I love football, almost as much as I love baseball. My team is the NY Jets, as it has been for as far back as I can remember. I'm 1300 miles from home base, so I don't get to see them play regularly.
However, I still love The Game, on any given Sunday.
One of my favorite treats on game day happens to be nachos.

Tortilla chips
Salsa
Taco cheese
Scallions diced
Shredded lettuce
Jalepenos


To make Tortilla chips:
2-4 tortillas
Taco seasoning
4 tbsp water

Preheat oven to 400. Mix taco seasoning with water till it's a thin paste (add more water if needed) brush over tortillas. Bake 15 minutes until crispy

Salsa
2-3 large tomatoes, diced
1 Vidalia onion diced
1 bunch cilantro, washed & torn
1-2 jalepenos diced
If desired, 1 c black beans & 1 c cooked corn, cooled

Mix ingredients together, refrigerate overnight to let flavors combine

To make nachos, cut up tortillas, top with cheese either put in oven or microwave to melt cheese. Serve over bed of lettuce with salsa and jalepenos
