So I am trying to plan out meals for the week, and limit my time in the supermarket. Today is definitely a baking day, especially with the fact it's a grey, icky day.
Today's baking include:
Dog treats
Granola
Sweet potato cookies
Quinoa cookies
Brownies
I am also planning on cooking lentils, rotini, rice & more quinoa for the week, so there's stuff in the fridge for the week.
I've been working on healthy choices for breakfast & lunch, for myself & my family.
Breakfast choices are cereal for the kids; for me: easy peasy eggs, oatmeal and smoothies.
For lunch the kids eat cheese sandwiches or pop tarts. I plan on creamy salmon, quinoa tabouleh, veggie burger, "seafood" delight & lunch with a girlfriend.
Tonight we are having meat loaf, mashed potatoes, gravy, peas & broccoli. Maybe have pumpkin spice waffles for lunch.
Tomorrow is chicken stir fry. Brunch will be a frittata.
Monday is Tomato soup & grilled cheese, with chips & carrot sticks.
Tuesday is chicken Alfredo with peas.
Wednesday we have youth group, so we have to be out the door by 6 pm. Im thinking one pot ocktoberfest with kielbasa.
Thursday I'm thinking either vegetarian shepherds pie or bean soup.
Friday is dinner out.
