I have been an on & off vegetarian since I was a teenager. At one point I had gone vegan for a brief time, but I struggled with giving up cheese.
I love to bake, and tweak recipes. I decided to vegan-ize one of my brownie recipes.
1/2 c carob powder
1 c oat flour
1/2 c whole wheat flour
1/2 c pumpkin
1/2 applesauce
1 tbsp coconut oil
1 c carob chips
1 tbsp flax seeds
Preheat oven to 350. Mix ingredients together until well blended. Bake for 25 minutes.
