Kitchen Chronicles

I made a very yummy dinner tonight. More kitchen magic
I made rigatoni with meat sauce:

for meat:
you can use boca crumbles or turkey meat or ground beef
add a tbsp of olive oil to a saute pan, add 2-3 cloves garlic thinly sliced. saute until golden. grate a zucchini finely, add to pan and saute 5 mins. add meat, sea salt, red pepper, Italian seasoning to taste. cook until meat is browned. drain if necessary
add to saucepan with 1 can tomato sauce mixed with 1/2 can water. heat thoroughly
boil rigatoni according to directions (about 15 mins)

serve with a nice hearty salad and bread

My hearty salad:
lettuce, artichoke hearts, capers, kalamata olives, mushrooms and shredded carrots

for the dressing: mix olive oil and balasamic vinegar together with 1 minced clove of garlic and Italian seasoning

garlic bread: take a stick bread and slice it open. drizzle with olive oil and top with garlic. bake in the oven, 375 til toasted brown (about 10 mins) for extra punch, top with provolone or mozzerella cheese
