the Chicken Dance

Hey, do you want to do the chicken dance? Ok ready...here we go...
Actually, its the rubber chicken.

I love when whole chickens are on sale, which seems to be a rarity these days. At least in my neck of the woods, it seems. However, I got lucky last week and whole chickens were on sale.

The Big Man was kind enough to roast it for me the other day, which makes my life easier. The beauty of the whole chicken is it can bounce back for at least one, if not more meals.

The bounce back for us will be chicken pot pie tomorrow night.

It's really easy, and I've been told by numerous folks that its quite yummy.
2 cups chopped cooked chicken
1 can cream of chicken soup
1 can veg all, drained
2 c bisquick
1 c milk
1 egg

mix the chicken, cream of chicken soup and veg all in a 9x13 baking dish. In a seperate bowl, mix the bisquick, milk and egg. Spread over the top of the chicken mixture. Bake at 375 until the top is done (about 30-45 minutes)

Another yummy bounce back, that is not quite healthy for you but oh-so-good:
2 c chopped cooked chicken
1/2 c mayo
1/4 diced onion
1/4 c shredded cheese
1/4 c chopped celery
1 can crescent rolls
you can add in: cranberries, walnuts or diced apples

mix the salad ingredients together. Unroll the crescent rolls onto a baking sheet. Put a scoop of the salad mix in the middle, roll up crescents. If you want to get fancy, you can make a ring out of them. Bake at 400 for about 15 minutes until its bubbly and the rolls are done.

Then there is my famous from the carcass soup:
1 chicken carcass (what's left after a few meals)
1 big soup pot of water
1 bag frozen stew vegetables
egg noodles

Bring the water to a boil. Add the chicken carcass and let simmer 1 hour, until the meat comes off the bone. Remove carcass and skim off fat. Add stew veggies, cook an additional 10 minutes. Add egg noodles and cook until done

All of these freeze really well too!
