Let it snow


Little Man has a delayed start due to snow this morning. Ive heard varying amounts of how much of the fluffy white stuff we received, but apparently its a lot. Living in the upper Midwest is very different from living in NJ in terms of snow. I'm used to a lot more closings & empty supermarket shelves (no eggs, bread or milk which means one thing-everyone is having French toast!) Than there are here. If there's a delayed opening or gasp! A closure, its pretty brutal here.

Just hoping I don't get plowed in until the little man goes.*fingers crossed*

Since its a cold, snowy day out...it screams chili to me. A nice thick hearty turkey chili in the crockpot with elbows and cornbread and lime yogurt to top it off.

Turkey chili

1 lb ground turkey, browned

1 can tomato sauce

5-6 scallions, diced both white & green

1can dark kidney beans, drained

1 can light kidney beans, drained

Chili powder to taste

Add all ingredients to the crockpot, cook for 8 hours.

Cornbread

1 pkg cornbread mix

1 can corn drained

Ingredients to make cornbread according to mix

Make cornbread according to package, add corn & bake

Lime yogurt

Mix plain yogurt with 1 tsp lime juice, cumin & diced scallions serve on top of chili instead of sour cream
