You were mint for me

I didn't plant a garden this year due to our cross country odyssey, but I did plant some goodies in a pot. One of my favorites is mint. I add it to my water bottle, salads, pasta and of course, sandwiches.
This is one of my favorites:

1 small cucumber thinly sliced
1 small container whipped cream cheese
Mint, finely chopped
Chives finely chopped
9 slices whole grain bread

Drain cucumber on cheesecloth. Mix cheese mint & chives. Spread on bread. layer cucumbers lasagna styl on top of spread. Add top slice of bread, press firmly.
These are terrific for a picnic, high tea or just making everyday lunch special.

Tuna melt

1 c tuna fish

2 tbsp mayo

broccoli florets, steamed

garbanzo beans

sliced jalepenos

sliced cheese (I like muenster)

toast

mix everything together, put on top of toast, with a slice of cheese and microwave until the cheese is melted.

Turkey avocado salad

sliced deli turkey

1/2 avocado

salad fixings

dried cranberries

lemon poppyseed dressing

plate together, top with lemon poppyseed dressing

Pesto salmon

salmon fillet

1 tsp pesto sauce

1/4 c plain yogurt

1 c veggies (I like the asparagus stir fry)

cook the veggies. add salmon to skillet, and cook thoroughly. Mix pesto & yogurt, add to pan. Mix all together and heat through.

Afternoon Delight

Lunches have been a struggle for me. Its only in the last few years that I really paid attention to eating better, and setting a good example for my son.



In high school, I alternated between starving myself and junk food.


 I never learned healthy eating habits until I was well into adulthood. I took a nutrition class offered by my gym, and got the low down on eating better.



However, old habits die hard, and I still have healthy eating issues. I want my son to eat healthy and if I am eating junk, that’s not being a role model. Why should he have


carrot sticks


 if I have potato chips?



I bring my lunch to work, and its not only less expensive but its better for me too! I have 5 go to lunches, that are yummy and definitely never boring.
