Egg McMoms

I am making the conscious choice to eat healthier. Some people call it clean eating, I'm just calling it making better choices. I tend to put myself last, and not pack healthy lunches (which sets me up for take out) and worse, not eating a good for me breakfast. 

I made the switch a few weeks ago. I decided to make my breakfasts for the whole week. You know, planning ahead. How very unlike the current incarnation of me. 

I decided on Egg McMoms for my breakfasts, with some fruit on the side. They are super easy, freeze well and are incredibly filling.



You need:

English muffins
6 eggs
Spinach
Diced peppers & onions (I used frozen)
Sliced cheese
1 c milk
Sausage
Hot sauce


Mix the eggs and milk together until well combined. Add hot sauce, peppers, onions & spinach. Pour into a baking dish and bake at 375 for about 20 minutes (or until set).


To assemble: 
Place sausage on a muffin piece. Top with egg mixture & a slice of cheese. 


To serve: 
Heat in the microwave for about 45 seconds.

Cherry Cherry

I know oatmeal is good for me, but it can get boring after a while. I struggle with making it taste better, and therefore helping me eat it. The other day I tried this and bam! Oatmeal was exciting!

1/3 c whole grain instant oatmeal
1/2 c almond milk
1/3 c cherries (I used frozen)
1 tsp chocolate soy protein powder
1 tsp chia seeds

Mix oatmeal, protein powder & chia seeds together. Add milk & cherries, microwave 90 seconds. Eat & enjoy!

It Takes Two

I always love when something works out where you get two for the price of one. I was on Pinterest and saw baked oatmeal. Reading the ingredients, I realized that they were the same as my puppy pancakes! So...double the pleasure, double the yum!

2 c quick cooking oats
1 c unsweetened applesauce
2 tbsp peanut butter
1 c milk (regular or soy)

For oatmeal, add fruit and cinnamon. For pancakes you can add blueberries, apples, carrots &/or peas.

Preheat oven to 350. For pancakes, drop by spoonfuls onto a cookie sheer. For oatmeal, spread the batter into an 8x8 pan. Bake 20 mins, let cool. Store pancakes in an airtight container. For oatmeal, store covered in a refrigerator. To serve, slice and heat for 45 seconds. I top mine with yogurt and berries!

Red, white & berry breakfast

To celebrate independence day, I made individual berry bakes for breakfast. So yummy and almost good for you too!

You need:
1/4 c bisquick
1/4 c yogurt
Sliced strawberries
Blueberries or black berries
Chocolate chips

Mix ingredients together, microwave for 90 seconds.

Strawberry Nutella Easy Breakfast Bake

1 c baking mix (I used hodgson mill whole wheat & flax)
1 c milk (I used soy)
1/4 quick cooking oats
1 c strawberries, sliced
1/2 tsp chia seeds
Handful slivered almonds
1 tsp Nutella

Mix ingredients together in a microwave safe bowl. Cook on high 2 minutes. Eat hot!

Heart Shaped box

My son loves cinnamon rolls. I make them every Saturday for breakfast. Today, I decided to do something extra special. I turned an everyday, roll in a tube into a symbol of love.
It's really easy.
Preheat oven to 400.
Open the package.
Unroll.
Make into a heart shape
Put on baking sheet
Bake 10 minutes
Frost
Eat
Enjoy

Tofu scramble

1 slice of extra firm tofu, patted dry
1 frozen stir fry vegetables, cooked
dash sweet chili sauce

spray a saute pan with pam. saute veggies for several minutes. crumble tofu into pan, add chili sauce and heat through

Over night French toast

1 loaf bread
6 eggs beaten
1 c milk
1 c sugar
1/8 c cinnamon and ginger, mixed together

place bread in a greased baking dish. mix eggs & milk together until frothy. add sugar and spices, pour over bread. cover and refrigerate over night.
preheat oven to 375. let dish come to room temperature before baking. bake 25 minutes

High energy parfait

1 c berries
1/2 c yogurt plain (I use soy)
1 tbsp almond butter
1/2 granola

Mix almond butter with yogurt. Top berries with yogurt mixture. Add granola.
