Menu Monday Holiday Edition

It's Christmas Eve, and it's the start of a super special week in our house-Christmas and vacation in our house!
That calls for extra snacks and juice! It's going to be super cold too, so we need hearty, warming meals. When it's a negative wind chill and barely above single digits, the weather is screaming comfort food!

Tonight, our tradition is to have pizza on Christmas Eve.

Menu Monday 12/16-12/22

This upcoming week is crunch time! It's the week before Christmas. Much craziness will abound. In years past, my family has gotten the short end of the stick in terms of healthy eating. This year will be completely different.

Tonight, we will have chicken cordon blue crescent roll ups.

Monday we will use up the leftover spaghetti in the fridge by making chicken Alfredo.

Taco Tuesday will be taco tot casserole. Easy peasy weeknight meal!

Wednesday night I'm making crockpot pasta fagioli.

On Thursday we will meat loaf
And mashed potato muffins

Friday is one of my favorites: buffalo chicken Stromboli

Deelightful Dinners School’s Out Edition




We are officially entering summer territory at our house. The breakneck pace of life during the school year is slowing to a halt. We don’t have as many places to go or things to do, and its pure heaven. I am looking forward to lazy nights, lounging in the yard, sipping my new favorite beverage-Target’s Lime Margarita crystal light mix and reading. The Big Man is in the process of finishing our picnic table, so I am looking forward to more al fresco meals. In the meantime…

Be True to Your School

Every year, for the official night of back to school we eat a special meal that the Little Man picks.


We eat on our fine china. My china is inherited from my grandmother, who in turn inherited from her mother in law.

We drink sparkling grape juice out of our wedding crystal.


This year, his favorite meal is pizza.

Menu Monday, holy week edition



It's Holy Week in my faith, and in my life its a short school & work week. I do have a lot going on, & that means really planning out meals with laser Sharp precision.

Tonight, its leftovers turned into a pasta bake. I have a meeting after work to finalize the 30 hour famine the youth groups are doing. It's already put together, all the big man has to do is pop it in the oven. Pair it with leftover cheesey breadsticks & a nice salad, and its a super yummy meal. Normally, its meatless Monday, but I have to be flexible.
Tuesday, I don't have anything going on-suprize, suprize-and its taco Tuesday. This week is black bean quinoa burrito bake. Pairing it with corn & rice, it will be a yummy, sustaining meal.
Wednesday is breakfast for dinner. Probably waffles or an egg bake. I have youth group & tenenbrae so its another quick turnaround.

Thursday is Maundy Thursday. I've wanted to have a traditional seder for that, since Jesus had a seder dinner for the last supper. However, the rest of my family does not share that desire...so instead we will have chicken fried rice (I've designated Thursday Chinese night). Paired along side is homemade fried rice, egg rolls & wontons and of course salad. I would like to attend church that night, its one of my favorite services. From the foot washing to the stripping of the altar, it sets the stage for Good Friday and its tragedy.


Friday is Good Friday. I miss the 7 last words of Christ service Trinity does, but that was a special place in life & time. Fridays are now go fish! Fridays in our house. Traditionally my husband's family has done fish & chips, so that or tuna noodle casserole are the options. I plan on going to the 7 pm service that night.
I also plan on dying Easter eggs with my son that day.

Saturday is pizza night now, so we will have pizza, wings & something chocolate gooey yummy for dessert.
I have to finalize everything for Sunday as well so there's a lot happening there. We have an egg hunt that afternoon, so I've got cleaning to do in the morning & cooking in the afternoon. Pa
QI want us to attend church as a family.  I don't ask my husband to go on a regular basis anymore. I do ask for Christmas & Easter. I think twice a year is doable.
Not sure what I'm making for Easter dinner, but my son did ask for the basket cupcakes I made last year.

So...of course I will. He's only going to be 8 once.

(Just like) starting over


It's Monday, and I ate too much yesterday. Way too much, and I felt it this morning. Can we say detox today?

Everyone has their own version of detox, mine involves a few steps:

1. Lots of water with mint & lemon.

2. No meat products for 24 hours

3. Gentler workouts. I know it seems counter intuitive, but if you ate a lot of junk, and then tried to sweat it out, your body would rebel. I'm still doing my usual but I'm focusing more on stretching today than my usual increasing weight, speed etc on Mondays.

So in keeping with the detox theme for today, I'm having a Greek tofu scramble for breakfast, tofu teriyaki over fried rice for lunch and corn chowder for dinner with lots of fruit and salad to counterattack the junk I ate yesterday as well as all the soda I drank.

Since its menu Monday, my meals for the week look like:

Tuesday: broiled chicken, potatoes and I'm having salsa on the side

Wednesday leftovers or breakfast for dinner

Thursday Manhattan steak & potato stir fry

Friday Tortellini soup & garlic bread

Mine Smell Like Honey


REM is back! But you probably either already knew it, or don't care or are wondering what sleep patterns have to do with motherhood.

But I digress...

It's Friday, and man I'm beat. It's been a LONG week, and its going to be a longer weekend. I've got a lot of things going on, all manageable. Saturday: clean. Two snow days have caused chaos, and mommy has been exhausted after work. Grocery shopping. Need to buy: milk, cupcake stuff, sugar cookie stuff, salad, lunches for the week x3, coffee & creamer, eggs, fruit, butter, juice boxes, super bowl snacks, turkey kielbasa, cereal, spinach, tomato sauce & pasta. Library. Church & Sunday school. A birthday party for Teddy, little man's best friend & the greatest teddy bear ever. Laundry & ironing.

The usual stuff that a household requires.

The puppy dog has another ear infection. I am very tired of it, especially since it can't be pleasant for him. I'm open to suggestions on how to prevent them. A friend of mine who is a rock star dog rescuer told me her dogs wind up not eating chicken or beef because that can trigger sensitivity. Her pooches get lamb based foods, which he does get. It's the treats that are bad.

It's just like if we ate junk food all the time. We wouldnt feel good and have health problems. Same thing with the puppy dog. The worst part? I probably did this to him.

Guilt.

But I can also make it better.

Ear washing & medicines.

It will be ok.

I am looking forward to some down time too. A chance to rest. Recharge my batteries. Find some peace. Relax. Read a good book. Putter in my kitchen. Prep some meals for the week.

Since its fridge Friday, I am already planning for next week:

Saturday: pork fried rice

Sunday: super bowl

Monday: chili & corn bread

Tuesday: chicken

Wednesday: waffles & fruit salad

Thursday: pierogies & kielbasa

Life is good, if exhausting.
